Pepper-Pairing Farm to Fork Dinner

with Piedmont Biofarm and Fair Game Distillery

Saturday, September 26th, 6-9pm

For one weekend a year in North Carolina’s Piedmont, the Pepper reigns supreme! This year warm up for the 8th Annual Amazing Pepper Festival by joining us for an exquisite five-course, hyper-local pepper dinner featuring the finest in produce and spirits from Piedmont Biofarm and Fair Game Distillery.

The farm’s dining program is led by farmer-chefs Geoff, Will and Brett. They offer an inventive cuisine based on what their farm and surrounding woodland produce from month to month. They creatively utilize wild, heirloom and otherwise unconventional components, focusing on whole plants and animals to draw out exquisite flavors. Each course will be expertly paired with wine and spirits from Fair Game Beverage Company, Pittsboro’s only legal distillery, offering superior fortified wines and liquors.

The hyper seasonality of our menu means that we offer a sample menu (below). The intrigue behind a truly local menu reflects the realities associated with producing good, clean and fair food. So let the anticipation build, and prepare yourself for a truly unique culinary adventure.

Patatas Bravas w/ preserved tobago aioli

Rainbow salad of fresh bells, fermented anaheims, blistered poblanos, wild greens, fried wildflower blossoms

Coal-roasted sweet corn and pepper chowder, foraged autumn olives, crispy carrot greens, toasted dill seed

Chile relleno with Peach Tipper-braised Cane Creek Ossabaw Hog Roast, fire-roasted padron pepper, fried edamame, roasted carrots, fermented datil chili paste

Seared marinated grass-fed flank steak from Braeburn Farms, potato confit crisped in beef lard, Tobago relish, toasted mustard crème fraîche

Pepper bouquet sorbet, candied pepper jam, toasted jalepeño seeds
